Broccoli and Cheese Soup

Wow, how has it been ten days since I posted here on the blog?

This week the only Pinterest I attempted was food. It was good. Just ask my daughter who enjoyed it for dinner and lunch a few days this week as well!


I didn’t have half and half but I did have some cream left over from another recipe, so I used a little less than 2 cups of the cream and substituted the rest of the half and half ingredient with milk. I found it had to cook down longer than suggested to get it to a thickness we liked but it was definitely good! I have also found the stick blender I picked up last month is my favorite kitchen tool right now. No need to transfer this soup to a blender where I would certainly land more soup on the counter than in the blender.

Next time I make this recipe, I am going to try adding Andrea’s beer bread beside it.
